It’s one of my favorite days of the year – Shrove Tuesday! Tomorrow Lent begins and so we feast on delicious fats and carbs prior to our Ash Wednesday fast. Here is one of my favorite recipes for pancakes! Top it with strawberries and whipped cream, butter and syrup, or however you fancy! Enjoy!
1 1/2 cups All Purpose Flour
3 1/2 teaspoons of baking powder
1 teaspoon of white sugar
1 1/4 cups of milk
3 tablespoons of melted, salted butter
Mix ingredients in a large bowl. Pour 1/4 cup of batter on top of heated griddle or heated frying pan. Flip pancake when edges look crispy and inside has air bubbles. Make sure batter is cooked thoroughly and pancakes are browned. Enjoy hot!
Note – if reheating, put them in your toaster rather than microwave to keep them crispy on the outside, and fluffy on the inside!
